Ingredients And Quantity

  • 1 jar salsa
  • 1 cup plain, fat free Greek yogurt
  • 4 chicken breasts, fresh or frozen
  • ½ cup water or chicken broth (optional)

Directions

1. Add chicken breasts to Instant Pot inner pot.

2. If using fresh chicken breasts, I recommend adding ½ cup water or chicken broth. This is not necessary with frozen chicken.

3. Top with salsa.

4. Cook on "Manual" or "Poultry" for 15 minutes.

5. Natural or quick release.

6. If you desire a thicker sauce, simmer on "saute" for 5 minutes (Optional)

7. Allow to cool for 10 minutes.

8. Remove chicken, chop with knife or shred with 2 forks. Return chicken to pot.

  • 2 red bell peppers, chopped
  • 2 green bell peppers, chopped
  • 1 Jalapeño pepper, sliced (leave the seeds in for a spicier chili)
  • 1 teaspoon dried oregano
  • 2 tablespoons chili powder
  • 1 tablespoon salt
  • 1 cup dried kidney beans
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup quinoa, rinsed
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can tomatoes, chopped

Directions

1. Place the beans in the pressure cooker and add water to cover the beans by one inch.
2. Pressure cook on HIGH for 4 minutes.
3. Let the pressure drop NATURALLY and carefully remove the lid.

Ingredients And Quantity

  • ¾ cup jarred salsa
  • ½ cup grated Monterey Jack cheese (about 3 ounces)
  • ¼ cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • ½ red onion, finely chopped (about ½ cup)
  • 1 red bell pepper, finely diced
  • 4 to 6 large skinless chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon chili powder
  • 1 green bell pepper, finely diced
  • 1 cup basmati rice (basmati is best, but long-grain can be substituted)
  • 1 cup chicken stock

Directions

1. Pre-heat the pressure cooker using the BROWN setting.
2. Season the chicken thighs with the salt and chili powder. 

3. Add the oil to the cooker and sear the thighs on both sides until well browned. Remove the chicken from the cooker and set aside. 

4. Add the onion and peppers and sauté until the onion starts to become tender – about 5 minutes. Add the rice and stir well to coat everything with the oil.

6. Pressure cook on HIGH for 5 minutes.

7. Release the pressure using the QUICK-RELEASE method and carefully remove the lid. 

8. Sprinkle the cheese on top of the thighs and return the lid to the cooker for another 5 minutes while the chicken rests and cools. 

9. Transfer the chicken thighs and rice to a serving platter sprinkle the cilantro on top before serving.
